Baked Eggs

I remembered last night, as I was heading to bed, that I had some cream left from my adventures in pumpkin soup.

Yes, after much eating the past week and basically abandoning my second attempt of Week 6 of the Hundred Push Ups programme, I could not stop thinking about food.

Besides the cream, I had tomatoes and parsley left over from my Christmas Eve barbecue with a menu of:

  • Grilled mushroom with cherry tomatoes and yellow pepper
  • Orange Pork Ribs
  • Ginger Lamb
  • Teriyaki Garlic Chicken Wings
  • Kosher Salt Prawns
  • Otak otak stuffed in Crispy French Loaf
  • Cinnamon Pumpkin
  • Grilled Tomatoes
  • Grilled Pineapple

Baked Eggs are real easy. and they can contain anything you fancy, really.

Egg all ready to be baked

  • Heat oven to 190 degrees C.
  • Slice onion. (Use yellow/brown for mild, red if you want it more spicy.)
  • Heat frying pan.
  • Halve cherry tomatoes or any small tomatoes.
  • When the pan is heated, add olive oil.
  • When oil is hot, put in onions, fry till soft. Turn down heat if necessary.
  • Season with salt and pepper.
  • Generously butter oven-safe bowls or ramekins.
  • Place ramekins in a tray so you can take the ramekins out easily.
  • Add in tomatoes when onions are soft. The onions should almost lose their form. (The onions in the photos were not soft enough, in my opinion.) I fried the tomatoes to start the cooking process which will continue in the oven.
  • Divide up the fried tomatoes and onions into the ramekins.
  • Put a nob of cream. (optional)
  • Crack an egg on the top.
  • Pop the tray with the ramekins into the oven and close it.
  • Lower the temperature to 170 degrees C.
  • It’s ready when the egg whites have turned white. This took me about 15 – 20 minutes. My eggs were not at room temperature. Once they start to turn white, it completes cooking pretty quickly.

I have a pot of rosemary so I just plucked sprigs and popped it in. There was a nice aroma during the baking process.

At the end, I topped it with some cayenne pepper, black pepper and parsley.

On hindsight, I should’ve added parmesan cheese before popping it into the oven as I’d some.

You can take out the eggs earlier or later, depending on how well done you want your eggs to be.

I just had the baked eggs alone for breakfast. But if I had buttered toast and bacon to go with this, it would’ve been just fantastic.
